The Obsession

Vegetarian: Tasty Recipes for Every Day (Complete Cookbook Series)

As I approach an entire year of vegetarianism, I must tell you that it has been quite the journey.  I actually caught the Vegetarian: Tasty Recipes for Every Day (Complete Cookbook Series) on sale at the bookstore and decided to buy it because the recipes appeared to be quite simple to prepare.  I have been using this book to prepare meals and the seal of approval is usually my son (who is not a vegetarian).

A few of the recipes he has even asked for as a dinner request.  I recommend this book because it is not one of those cookbooks that assumes you have to be a chef and have all of these advanced tools in order to prepare a meal.  My cooking style is 'down home', 'up the country' cooking so all of those tools and things - not so much.

I will say that this book has opened my eyes to new spices, herbs and vegetables.  This journey has been amazing!

A few of the recipes that were a success have been:Mixed Berry Couscous

  • Mixed Berry Couscous: I ended up eating on this for days and multiple times per day.  It tastes great cold or warm.
  • Fettuccine with Zucchini: I now know how to make this without the book.  This is one of the recipes my son requested over and over again.
  • Poached Eggs with Garlic Yoghurt Dressing and Spinach: I actually modified the last recipe to make it my own and it was delicious!

Modified recipe

Dressing

  • 1 cup Greek yogurt
  • 1 clove minced garlic
  • 1 small bunch of of snipped fresh chives

Meal

  • 2 slices of baked Texas Toast garlic bread
  • 2 fried eggs seasoned to taste (fried in butter...lol!)
  • 2 handfuls of spinach leaves sauteed in garlic and butter
  • 1 halved tomato sauteed in remaining butter and chives

The flavors were amazing.  My energy was up and I was actually satisfied.

Note: I would have plugged in a photo of this recipe, but I starting eating before I snapped a photo.  Ooops!

The full-sized jar was lovely with clear labeling.  Even the sample jar was branded properly and both jars were functional.  The receipt included some special notes about the company's loyalty program.  They have a refer-a-friend type of program, which gives the referrer perks!  I won't spoil it, so I guess that means you'll have to order to find out the details.

Canola oil

Not too long ago, I reviewed African Royale Hot Six Oil.  As always, I pay attention to the ingredient list and this time I saw canola oil.  I had been experiencing some skin issues and this oil seemed to calm it all down.  This experience caused me to ponder the ingredients. The top five ingredients were - olive oil, canola oil, wheat germ oil, sweet almond oil and safflower oil respectively.

Having researched and heard of the benefits of some of the others, I was curious about canola oil.  I cook with it from time to time, have read some conflicting opinions about it in the past and now I'm finding it as the second ingredient in a product that seemed to work well for me. So, let's break this down!
